Christina gave us a light dish for this week's German Cooking Challenge - Wurzelsuppe (Root Soup) - which I think is better described as carrot soup. (WW points per serving: 3) Funny thing is - I recently found another carrot soup recipe that I have been wanting to try!I had never heard of one of the ingredients, celery root, before - so I went to the Cook's Thesaurus to find out what it was! After learning that it is also called celeriac - I know that I have seen it in the supermarket before.... but couldn't find it when shopping for the ingredients, so I went with the substitute that was suggested - turnips - which are readily available in the stores that I shop in.
I started to make the soup in the morning, planning having it for lunch. But trying NOT to eat it before then was hard - the smell of the vegetables cooking was wonderful! I wish I had an immersion blender to puree the vegetables - my blender wasn't able to puree all of the pieces without getting clogged with the other puree.Definitely don't dismiss the addition of a little bit of nutmeg and lemon juice - both add a delicious taste to the dish and help elevate it to something very yummy!
Would I make this soup often? Probably not since the appearance reminds me of baby food and/or baby by-products... (hope that you get that - but look at it...!) - but it would be a great way to use up the root vegetables that seem to languish in the refrigerator!

Looks very healthy! I read the entry earlier, so forgive me if you mentioned this, but did your kids eat it? I am having such trouble finding healthy stuff that they will eat! Samuel is going through this stage where he all of a sudden doesn't like something that he has liked forever! Crazy!

@ The Portens: No, the kids didn't eat this - nor did I think that they would! I made it for myself at lunch - they will eat carrots, but not pureed!! :-) Isn't it funny how they get hot/cold about food?!?? Wish I could!
