Spargel mit Kratzete (White asparagus with pancakes)

After a break on the Real German Cooking Challenge with Amiexpat, we were ready to get back to work! This is White Asparagus season (so I have learned..)- so this week's recipe was Spargel mit Kratzete (White asparagus with pancakes).

I found it hard to find white asparagus in Greenville - but did locate some at the Whole Foods store. DH is not a fan of asparagus - and made the comment - "Isn't it bad enough to eat the green stuff - but now, we have to try it white???"

I assured him that we would be eating ham with it, so he would only have to try it! (Sounds like I am talking to my kids! :-0)

White asparagus needs to be peeled with a vegetable peeler to get the woody outer stalk off. I enjoyed doing this, but ended up breaking several stalks because I would press too hard! The asparagus was easy to prepare - cook in salted boiling water for 20-30 minutes and then serve with melted butter. The taste of the white asparagus was milder than regular green asparagus - and peeling the stalks allowed it to be very tender.


Accompanying the asparagus were a torn pancake - sounds strange, but it actually worked out pretty good! We all enjoyed them, especially dipping them into the excess butter on our plate! I wasn't sure about the correct size of the pieces - so I just tore them up to be about a bite each. It did seem a little strange to eat pancakes in this way - we are so used to them being a breakfast item!
This dish was perfect for the warm day - a fairly light dinner. Oh - DH did like the meal too!

We just tore the pancakes into bite-size pieces as well. Glad your husband liked the meal too. I forgot to mention that some of our guests had never tried Spargel and were pleasantly surprised. They're planning on making the recipe soon themselves.
