Berliner Frikassee (Berliner Fricassee)


Finally time to try something a little more "daring" with the Real German Cooking Challenge from Amiexpat - so Berliner Frikassee was the recipe this week.
Unfortunately, I have been busy with traveling (VEGAS, baby!) and having visitors... so I didn't get the sweetbreads ordered. (2 week notice needed at my butcher's...! at $11.00 a pound!!) Thankfully, the sidenotes to the recipe state that you can use chicken instead of the sweetbreads and veal - YES! Easier for me and my wallet!!!

What REALLY convinced me to make the recipe were the morel mushrooms! I used to hunt mushrooms with my father when I was little - and I absolutely love morels! (lightly dredged in seasoned flour and fried, thank you very much!) I have never tried dried ones - so this seemed like a treat to me! This was another ingredient that was very pricey - 14 oz. cost $11.00!!! Thankfully, I cut the recipe in half - so I spent $22 for mushrooms instead of $44 that it would cost to make the entire recipe!

The finished product was very delish! I love the cooked flavor of the vegetables cooked with the meat - it really does give the dish alot of depth that you wouldn't have otherwise.
My "downfalls": I overcooked the chicken - I should have been watching the dish while it was in the oven and add more liquid to keep the dish from drying out. I also have realized that I am a mushroom snob - the dried mushrooms were okay - but still had that packaged taste to them - nothing like a freshly picked and prepared mushrooms!
Next week's recipe is Leipziger Allerlei, a vegetable dish with the option of adding crawfish to it (I might - depends on cost...)

I wonder if fresh morels are super expensive. I agree that dried mushrooms always have a slightly packaged taste. But this dish cost quite a lot as it was!
